Chicken Durango

Our newest dinner test was Chicken Durango and it was a hit. Matter of fact, the toddler preferred it over everything else.  The chicken was very moist. And, to be honest, there was enough mixture for at least 1.5 lbs of chicken, maybe even 2.

This recipe comes from Once-A-Month Cooking Family Favorites.

(I bought it with the thought that I would actually try once a month cooking...)

1/2 cup melted butter
5 tbsp lemon juice
1 tsp garlic salt (I just used powdered garlic)
1 tsp paprika
1 tsp dried oregano
Salt and pepper to taste
1lb boneless, skinless chicken breasts

Combine all ingredients in a small bowl (I used a glass measuring cup). Place the chicken in a glass baking dish. Pour the mixture over the chicken. Bake uncovered at 325 for 45 minutes.

Per the cookbook, you can actually put everything into a gallon freezer bag and freeze.  When ready to cook, thaw and place in baking dish. Cook as indicated above.
