Oatmeal Spice Cookies

In the past, I have made chocolate cookies from cake mix, adding oatmeal for texture. Our family is trying to cut back on chocolate, so I decided to try something a little different. Everyone seemed to enjoy the new twist, so these are likely to be a staple in our house.

Oatmeal Spice Cookies

1 box spice cake mix
1/4 cup vegetable oil
1/4 cup water
1 egg (beaten)
1 cup quick cooking or instant oats (plain)
1/2-3/4 cup brown sugar in bowl (optional)

~Preheat oven to 350 degrees.

~Empty box of cake mix into a large bowl. Add water, oil and egg. Stir until thoroughly combined.

~Mix in 1 cup of oats. Continue to stir until combined.

~Drop teaspoonfuls of batter/dough onto non-stick baking sheet. (Optional - dip the top of each teaspoonful into brown sugar before placing on baking sheet)

~Bake for 11-13 minutes at 350 degrees.

~Allow cookies to rest on baking sheet for 1 to 2 minutes before moving to cooling rack.

This recipe yields 5 1/2 dozen cookies.
